A smooth and creamy dressing that blends the mild sweetness of strawberries with the complex flavor of balsamic. For a more complete flavor we also add onions, thyme, and black pepper.
This dressing is perfect for a summer salad with spinach, chopped kale, or mixed greens. Add other fruits, like strawberries or apples, and seeds such as pumpkin seeds and some chopped walnuts and you're sure to add it to a weekly lineup.
